The best barbecue starts with the rub and what type of rub you use. The whole entire purpose of the rub is to enhance the flavor of the meat. Here at Buz and Ned’s, we love flavor so we use rubs on all of our meats.
Some say that using rubs will help promote the formation of a “bark” on thicker cuts of meat, resulting in that spicy bite that everyone enjoys.
We use a basic spice rub made up of paprika, kosher or table salt, black pepper and granulated garlic. However, you can also try other spices like mustard, cayenne pepper, cumin, celery seed and onion powder.
When we prep pork butts, we mix our rubs with Worchester Sauce and have at it.
The best recommendation we can make is to experiment. Everyone has different taste and aims to make that unique blend that gives their meat a kick.
